  1. Heat the oven to 180C/350F/Gas4.
  2. Place all the ingredients in a large mixing bowl and mix thoroughly - it s best to use your hands here.
  3. Line a well-greased 900g/2lb loaf tin across the width with the streaky bacon, keeping the bacon ends outside of the tin.
  4. Transfer the mix into the lined loaf tin and pat down until level. Fold the bacon ends over the top of the mixture. Cover the top with an oiled piece of grease-proof paper.
  5. Bake in the oven for 1 hour 30 minutes or until the meatloaf is cooked through. (Remove the paper 15 minutes before the end of cooking).
